Granola doesn’t last in my household. It goes as fast as I pull it out of the oven. Sometimes I wonder why I even bother prepare it. Well… besides the crunchy, nutty texture of the oats and toasted nuts, and the sweet taste of the dried fruits that makes it super d’luscious……um…ok…that’s why I make em. I admit, I do enjoy every single bite just like everyone else in the house.
My son D’Angelo is such a granola gremlin. He has no granola self control whatsoever. He prepares tons of parfaits with it. Being that I always have blueberries and greek yogurt on hand, he doesn’t hesitate to whip up a quick, d’luscious and healthy parfait for himself, over ….and over again….until it’s completely gone. This might sound kinda crazy, but I think I’m gonna have to keep a jar of this granola in my bedroom, so I can enjoy it at my own leisure.
Here’s the recipe to my home made GRANOLA. It’s awesome with yogurt or ice-cream, or simply solo.
I change up the ingredients all the time and you can too. You can use all or deviate to your liking.
INGREDIENTS
3 cups oatmeal
1 cup rice krispies
1 cup sliced almonds
1 cup shredded coconut (I used the coconut shreds from juicing my coconut)
1 cup raw hazelnut chopped
1 cup raw peanuts
1/2 teaspoon saigon cinnamon (use whatever ground cinnamon you have)
1/2 teaspoon nutmeg grated
pinch of kosher salt or sea salt
1/4 cup sugar (you can use more or less)
1/2 cup raw honey (you can use more or less)
1/2 cup of walnut oil (use your favorite oil)
1 tablespoon homemade pure vanilla
1 cup gourmet raisin
1 cup dried cranberries
Directions:
In a bowl, combine oatmeal, rice krispies, sliced almonds, shredded coconut, hazelnuts, peanuts, cinnamon, nutmeg, sugar, and sea salt,
In another bowl, combine honey, walnut oil and vanilla
Add wet to dry ingredients and toss to combine, ensuring all the dry is coated
Preheat oven 375 degrees F
Place parchment paper on sheet pan and grease parchment paper
Spread ingredients evenly on sheet pan and place in oven for about 20 minutes
Remove and toss with gourmet raisins and cranberries
Spread evenly and allow to cool.
