Open Faced Spinach Omelette

 

I felt really guilty eating this open faced spinach omelette. It was so sinfully d’luscious! Even though I prepared breakfast for a total of 7 people, I really wanted to feed a whole lot more. Why? Because I get the feeling that the entire world needs to indulge in this wholesome goodness.. Fluffy, velvety, smooth, heavenly and let’s not forget d’luscious, are simply a few of the adjectives that I would use to describe this open faced omelette. I gives me the feeling as if I’m on cloud nine….flying high fa sho’.

Some individuals assume that an egg… is just simply an egg and it’s no big deal. Really???  Not in my world. Food is absolutely amazing in my world!  Regardless of how simple a food item may be, it can be transformed, revamped, reinvented into a total world of bliss, as long as it is prepared with love…..lots of love.

At the age of 14, my son Robert made the fluffiest eggs. His eggs were better than mine. Can you believe that?  Well…he’s my child and has the gift of cooking as well.  It’s in his blood line and he can’t get away from it even if he wanted to. I prefer his eggs over mine and often had him prepare the eggs for breakfast on any given day. His technique for scrambled eggs wasn’t as quick as mine. Also I noticed that he took his time and never burned the eggs either. My attempts to achieve his level of fluffiness was unsuccessful….but not anymore! I can do this all by myself and I had to learn, since he totally relies on me to cook everything nowadays, including his eggs.

This open faced omelette with spinach was cooked low and slow on the stove top. It was divine…pure bliss…Wow! Wow! Wow! It wasn’t a quick fix kinda omelette. It was sort of like a slow churn.

My friend Stacy was visiting. She is one of my best friends. Stacy REALLY loves my food and demonstrates her love by informing everyone that crosses her path about my passion for food…(and cleaning too, but that a whole other website). She was served breakfast in bed. I really pamper her whenever she visits. She says she feels like a princess and all her “food” dreams come to reality, at my house. She usually yaps away on her cell phone while being served. I’m such a pleaser. If you ever visit my home, you will get pampered too. The hospitality at my residence is unlike anything that you have ever embarked upon…it “tun up!”  I enjoy pampering others. I just have that caring soul…  Stacy’s son Jahmir is a picky eater, and I had to remove all the additional fixings from his omelette. He hates when his eggs have brown spots…so no brown or burnt looking egg marks on Jahmir’s eggs. He is only 6 years old and I want him to eat, so I had to prepare a separate omelette for him. I told you I was a pleaser….even for the young ones, they need love too. Can you just imagine how spoiled rotten my own children are?

While I was adding the spinach to the omelette, Stacy walked into the kitchen and said, “I love spinach in my omelettes.”   I did her the honors and added another handful to the skillet. She was thrilled. It was everything that she had imagined and more. She insisted that I add tomatoes, so I did. Not only were the Campari tomatoes sweet , but they added a savory touch that expels all of your senses. Everything was melt in your mouth d’luscious. The fried plantains and bacon was an excellent accompaniment to spinach omelette…and so was the ciabatta. It is one of my favorite breads. I have introduced Stacey to a variety of food items and I know for a fact that ciabatta  will now be on her list of favorites. You too can try it …if you haven’t already done so. You won’t regret it.
