Raw Beets and Sweet Potato Detox Salad

 

Whomever told you that sweet potatoes can’t be eaten raw; lied….period. Drizzle on some olive oil, add a sprinkle of sea salt and pepper, toss it all together and you will be amazed!

Here I have a combination of purple beets, chioggia beets (that’s the one that has the red and white spirals inside and resemble a candy cane), and golden beets, which to me, doesn’t really taste like beets but like a sweet corn, and last but not least, sweet potato/yam.

I eat this all the time. I love root vegetables…RAW. I love beet in it’s raw state and have as much appreciation whenever they are roasted. My spirooli has become one of my favorite gadgets. I used it to create the spiral shape vegetables. I eat with my eyes first and this gadget allows me to add another level of dimension to my masterpiece. It’s an easy yet amazing task; anyone can do. I just know that you are going to try raw beets and sweet potatoes someday. Your Temple will thank you.


For those who are unsure of what a spiralizer or spirooli is; here is my handy dandy gadget that makes noodles out of any vegetable. Including carrots (as shown in this photo).

Raw Beets and Sweet Potato  Detox Salad
Recipe:
1 medium purple beet
1 medium chioggia beet
1 medium golden beet
1 small sweet potato
A drizzle of Extra virgin olive oil
Sea salt or pink Himalayan salt and pepper to your taste
The juice of one lemon

Directions:
Wash and peel beets and potatoes
Using spiralizer/spirooli, spiralize all vegetables and transfer to a bowl
Drizzle olive oil, lemon juice, salt and pepper
Toss to combine
Enjoy!
