Luscious, vibrant, leafy callaloo is a super tasty and nutritious staple in my home. In Jamaica, it’s one of the main source of greens and is consumed regularly. In the USA, it’s referred to as amaranth, which is indeed a super food. I personally think that most, if not all herbs, fruits, spices and plants are all super foods. Most contain multiple vitamins and minerals that are necessary to sustain our health.
Callaloo can be eaten as a side dish or main entree. I usually eat it with provisions (boiled or fried dumpling, yams, boiled bananas etc) which are starchy but compliments the callaloo exceedingly well. On certain days, I’m just not in the mood for starches. At times, I don’t crave or feel the need for rice, provisions or pasta, and this day happens to be one of them. To balance the dish, I add protein (the roasted chicken), and more vegetables; a combination of sauteed zucchini squash, yellow squash, eggplant and broccoli. It’s simple divine, yet oh so fulfilling.
Try this combo sometime. It’s quick, simple and far more nutritious than fast food on any given day. You won’t be disappointed.
