Roasted Vegetables with Beet Greens

Some people think I’m nuts for loving earthy beets.  Ask me if I give a rat’s ass about what they think.  Absolutely not! I LOVE beets. They are detoxing and fulfilling….and so freaking d’luscious!  On my ‘no rice or heavy carbs and starchy days’ my go to meals are roasted vegetables. I really appreciate the direction that my body is headed. When I crave for something edible, it’s usually vegetables, which is always a healthier choice and I can whip up a fantastic meal in no time.

Roasted vegetables may seem complicated but it really so simple and easy to prepare. I even added the beet leaves to my sheet pan.  Beet leaves are edible too. Depending on my mood, I may remove or leave the beet skins in tact. It’s just as d’luscious either way. Herbs also add more depth of flavor.  And because I love and adore the smell of lemongrass, I added it to my pan.

A quick drizzle of olive oil, sea salt and pepper is all it takes to create this magical masterpiece. The flavor become more concentrated as it roasts in the oven. I’m thankful to mother nature for proving this bounty. My body is truly happy.
