Roasted Plantain Gratin

 

I roasted both of these ripe plantains in the oven. I didn’t peel or slice them. The expansion of the heat caused them to burst open. The caramelized areas are supersweet! I’m thinking of slicing them diagonally and placing them back into the oven and topping them with some tomatoes and mozzarella cheese. That should be some ooey gooey stretchy cheesy goodness?

I worked my magic and made these plantains totally awesome!
I added tomatoes, mozzarella cheese and fresh basil.
The sweetness from the plantains and tomatoes; the stringy cheesy goodness from the mozzarella and the freshness from the basil…..POW!!!!
