Stew Peas with Gungo Peas, Pink Beans, Pig Tails and Burnt Cow Foot

 

If you are not from the islands, you may be asking yourself: “What the heck is gungo peas?” Well you are probably more familiar with the term: pigeon peas. It’s one and the same.

Stew peas is a Jamaican favorite. It’s a one pot dish that combines any choice of meat you desire. You can also swap the meat for vegetables and make it a vegetarian delight. It’s traditionally prepared with pig tails, chicken feet, red kidney beans and spinners (dumplings). Once you’ve prepped all your ingredients, the meal becomes a super simple, one pot dish. I’m easily bored with food and have zero problems recreating nostalgic, comforting culinary delights that brings satisfaction to my soul.

Being the culinary extraordinaire that I am, I deviated from the the standard recipe and added other traditional Jamaican ingredients like burnt cow skin and pigeon peas (gungo peas) and pink beans as opposed to the customary red kidney beans.  The tails and skins add a rich and gelatinous gravy that compliments steamed rice on any given day. Collagen does my body well and being that I don’t rely on packaged collagen, I get all the nutrients from bones and offals that are as d’luscious as they are nutritious.
