Roasted Veggies with White Eggplant and Kale

Is this a salad that I will be serving regularly, alongside the lunches that I prepare?
Not at the moment.
But guess what? I do compromise.
You can enjoy this nutritious salad by having it catered for any occasion.

During one of my catered lunch events; I received feedback from one person, that I should include steamed cabbage with carrots as an option.
My initial response almost made me gag.
Why?
I despise that steamed cabbage “thingy” that most Jamaican restaurants serve. I know that it is a less expensive option, but I just can’t.  I won’t be serving anything that looks or taste like the “traditional” steamed cabbages and carrots. If this is a dish that you personally enjoy, then more power to you. I’m just don’t happen to be a fan. I have yet to eat this concoction from any restaurant and enjoyed it. I actually prefer to eat it raw without any dressing, allowing me to taste the realness and freshness of the vegetables. Don’t get me wrong. I do love cabbage and carrots…..MY WAY….which usually turn things up a notch by creating a visually appealing and MORE FLAVORFUL version.

They say the customer is usually right .and I do listen, however that “traditional” mix up will never be on any of my menus. Cabbage will be served, but it just won’t look like the “cabbage thingy” that most Jamaicans are accustomed to seeing.  The lunches  I prepare, usually includes a mesclun salad, which is comprised of a blend of baby lettuce greens, dried cranberries and tomatoes; sometimes grape tomatoes, sometimes campari. Occasionally I may add blueberries. I’m a vegetable loving diva. who enjoys and appreciates sexy salads. My salads are as sophisticated as my palate and in the future, I will include more options (as a separate order). My preferred salads may seem complex, but for me it’s a stroll in the park. They taste excellent as is or can be combined  with your choice of meat. Occasionally a customer may request that I omit the starch and serve the veggies with meat only. Ange’luscious’ sexy salad are so filling, you really don’t miss the carbs.

Ok, enough of my rambling.  For those who aren’t familiar with Ange’luscious’ style of cuisine, it all boils down to sexy, nutritious, food that warms the heart, mind and soul. Every ingredient in this culinary delight was roasted, which intensifies and pronounces the flavors. The vegetables are crisp yet tender and so scrumptious!
