A pescetarian delight, satisfying, healthy and d’luscious! Yes, I love to play around with my Cod. I really do, especially Cod fritters. I would make some right now but it’s a little too late and I’m already in bed. This is a great way to eat your beans. The lima beans are so buttery, hence the name butter bean, which is what most Jamaican refer to it. When fully cooked, beans usually have that nice buttery, melt in your mouth texture.
This dish really rocks with some pasta. Any kind of pasta. The sauce wraps around the pasta ever so lovingly, and I am getting hungry just thinking about it. Each bite is loaded with a chunk of that salty cod which seem to hold much authority over this dish. Salted but just right. Not overpowering saltiness. Just the right balance. Try it. I also enjoy this with boiled dumplings, bananas and yams.
