Oven Baked Cod with Okras

 

To know me is to love me. If you really knew me, you would know that I love food, and will try just about anything that food related. In this case, it’s “fresh” cod. I have always eaten cod, at least 3-4 times per month. I use it in many of my authentic creations. However it has always been Salted Cod.

While grocery shopping the other day, I decided to buy the cod fillets. I personally prefer whole fishes, with the head and tail attached. For filleted fishes I usually buy whiting, mahi mahi and salmon. I noticed the cod and thought, “hmmmn I’m gonna try that!” Before I knew it, the cod made its way into my shopping cart, into my oven and onto my dinner plate. Yummy!!!

Fish and Okras is one of the greatest combination ever. Most of my fish dishes  includes okras. It reminds me of the song by Johnny Gill and Stacy Latisaw: “Perfect Combination.” As a child I heard that song constantly. It was pure harmony, just like fish and okras. Oh …. and the buttery sauce was an awesome compliment and made it even tastier.

Since lately, I have also been throwing everything in the oven. Right now this minute, I’m getting flashbacks of my teenage years, with my mom. My mother seemed to put everything in the oven.  It’s a quick, convenient, hassle free, no hands type of cooking and it gets the job done well. This also gives me the opportunity to mulitask and get some housework done, like throwing in a load of laundry or mopping the floors. Yes I am domestic too. I guess the oven has been my crock pot lately and I am loving every minute of  it.
