Steamed Callaloo with roasted yams, boiled bananas and fried dumplings

 

Callaloo is  traditionally eaten for breakfast. It can also be consumed as a side dish.  This is a versatile dish which is easy to prepare.  There are so many variations to this dish. It is traditionally cooked with Salted Cod, however I prefer to serve with crumbled bacon over the top or simply add it into the dish.

This was indeed a hefty breakfast for my family this morning. I can assure you, it will definitely keep us energized for a great portion of the day.  My son D’Angelo, claimed he no longer eats bacon, but quickly changed his mind as soon as I removed the bacon tray from the oven.  His bickering quickly turned into a playful bacon fight, while my grandma Dulcie challenged the taste of the bacon and insisted that the bacon we ate today, was actually from a sheep and not from a pig. Grandma knows best.  She has raised her own animals, so she should know.

By the way, that picture was “my” breakfast serving.  I didn’t eat it all, but it won’t go to waste.  I promise. I will eat it later…..or  maybe tomorrow.
