Steamed Yellow Tail Snapper with Baby Bok Choy and Broccoli

 

On most days,  I’ve been noticing that I crave vegetables, and that’s a good thing. I intend to reverse every  single illness in my body, by consuming all the nutrients that are conducive to my body’s productivity, with foods that are directly from the earth.

Since I made the decision to eat healthier,  it has become so much fun. There is never a boring day in my culinary world.  I must admit that I do enjoy my vegetables,  as much as I do  my authentic creations.  On some days, I really couldn’t care less about eating rice, or dumplings, or pasta, or any kind of starchy foods… and it feels oh so natural! Why had I not done this sooner?

Being a foodie, I was under the assumption that I was eating heavenly, because I was more adventurous with foods. I have come to the realization, that vegetables aren’t just healthier for you, they are simply awesome! I am gradually eliminating most foods that I realize are unhealthy for me and I really don’t miss them at all.

In addition to being a healthy meal, the photo in this blog appeared amazingly beautiful, so I told my hubby that this would be “my” dinner. He threatened: “you better eat all of it!”  You should have seen the surprised look on his face, when he noticed that I was devouring this authentic dish. It was most satisfying.  The vegetables were crisp, yet tender and complimented each other just the way they were meant to.  The  yellow tail snapper,  nestled in the center was gracefully absorbing  all the love,  from the sauce and the vegetables.

I can definitely transform into a vegetarian. I see it coming.
