Don’t overwork your meatball mixture. If you do, it will become tight, stiff and kinda rubbery. Moist meatballs that are bursting with flavor are the people’s choice in my home. Bland foods isn’t our style. The inspiration behind the Swedish meatballs and the sauce derived from an abundance of mushrooms that I had on hand. I try to avoid spoilage at all cost, hence the utilization of the mushrooms and the creamy moscato mushroom sauce.
Lately I’ve been making these super ginormous (if there is ever such a word) meatballs. It’s easy for me to ball up several pounds of these d’luscious babies, bake them off and remix them in many of my authentic dishes. Meatball sandwiches are my son’s favorite. Hand him a baguette and some mozzarella and it’s a wrap. Yeah, sandwiches in 2.5 seconds! We say that a lot in my house. On a different note, these Swedish meatballs were remixed into many other delectable dishes which were enjoyed by all.
