Turmeric Chicken Vegetable Soup

 

It is officially midnight. Yes, and I ate this soup for dinner/supper just about an hour ago.  There aren’t any rules in my home that hinders the family form eating at a specific time. We eat when we are hungry. I eat when I am hungry. I have been running errands for most of the day, and I hadn’t really eaten much. All I had the entire day was a slice of blueberry cornbread, a banana, and a bottle of water. By 8pm I was starving. I couldn’t wait to get home. I began to prep my dinner immediately. I washed and cleaned the chicken, added it to the pot with some natural herbs and spices, which included Turmeric. Turmeric has so many medicinal properties, so I try to include it into my authentic dishes where-ever possible.  It creates a yellowish hue, is somewhat tasteless and not overpowering.


While the chicken was simmering in the big pot of love, I peeled and cut up the veggies and gave them a nice rinse. Now while I’m cooking, I photograph in stages. Each time I cook, I just have to photograph my dishes. I can’t resist the urge. I can count the times that I haven’t stop to take photos while cooking. It’s such an obsession. I drank  2 glasses of carrot-cucumber-ginger-celery-lemon juice to stave off the hunger while I cooked.


Each and every single time that I take on  the challenge of cooking soup, I realize that I need a much bigger pot. Now I already use a pretty big pot, but I usually cut up so much vegetables to add to my soup, the pot appears to be overstuffed. However, the more the merrier. I made everything fit. I usually add everything but the kitchen sink but I maintained my composure and stuck with the veggies that I had pre-cut: turnips, carrots, potatoes and chayote (cho-cho). Just kidding. No I didn’t…I couldn’t help it!!! I added cabbage and corn too! I slice the cabbage into chunks  and cut the corn about 2 inches thick.


My nephew and son D’Angelo couldn’t wait for the soup to finish. I guess they wanted something hearty too. They both stood in the kitchen with their bowls in hand.  What the heck do they think this is? A cafeteria? Anyway I shared them both a bowl of soup. My son D’Angelo turned to my nephew and stated: “Welcome to life.”  After my nephew took the first spoonful, he came back into the kitchen just to inform me, that I have to text his mother the recipe for the Turmeric Chicken Soup. The boys said that he thought that soup was a bunch of noodles in salt water. Wait until his mother hears this…. He says my Turmeric Chicken Soup is the best soup that he has ever had in his entire life. I can’t wait til morning to talk to his mother…..
