Potato and Green Bean Salad

 

If you are a rice eater and believe in your heart that you just have to have rice each day; change your belief. If you make this one dish, you will notice that sometimes it is okay to change things up a bit. You wont miss the rice or the pasta, but you will enjoy a little starch with some greens. This can also be eaten as a side dish. I prefer to eat it on its own or accompanied by meat or fish.For me, it pairs excellently with  barbecue or honey dijon or jerk chicken. The textures and contrasting flavors just can’t be beat.

Have you ever tried purple potatoes? If your supermarket doesn’t carry purple potatoes and you have a Whole Foods Market in your area, you won’t have to search too hard. Whenever I shop at Whole Foods, I always seem to find purple potatoes. It’s colorful so you definitely want to add it to your repertoire of foods. Colorful foods are often more beneficial to your health. In this dish, I have added purple and idaho potatoes. You can use the potato of your choice. I buy all kinds of potatoes. Yukon Golds are my favorites.

What is to not love about green beans? You can enjoy green beans even in its raw state. I blanche my beans, which is more like a quick dip in some boiling water and I’m ready to devour them. This is a great alternative to your standard potato salad. It is a potato salad, I simply change this up a bit, which I do quite often. My palate doesn’t like to be bored at all. I TAKE FOOD RISKS! If I try it and I like it, I will try it again. This I will definitely be preparing. I love potatoes and I love beans. What better way would you marry the two? The possibilities are endless.
