Curry….oh how I love thee, let me count the ways. I’ve respected curry since the beginning of time, and have yet to meet an individual who dislikes the taste of curry. As a child, I ate lots of curry goat and curry chicken dishes, however times have changed; I’ve blossomed into a foodie who lives for new, reinvented, unfamiliar tasty dishes. I play around with my food. I’m super curious about food.
Where does my creativity come from? I honestly have no clue. All I know is that deep down inside, my brain has a sincere fascination….I mean, a deep obsession with all things food related. I’m so addicted to eating a variety of different cuisine. I refuse to eat the same thing over and over …and over; so I play around …with food of course.
If you have a large family and want to stretch the meal far enough to feed everyone, PLUS have left overs; adding vegetables into the dish almost always does the trick, in addition to creating a more complex and interesting meal. I added cabbage and bok choy, which are two of my favorite vegetables into this awesome curry chicken back dish. If chicken back isn’t your thing, you could substitute with the meat of your choice, or eliminate meat all together. Curried vegetables are totally awesome. Matter of fact , curry anything is BOSS!
Curry is such an amazing seasoning blend that I’ve begun preparing my own curry. Yes, so true. I no longer buy yellow curry powder anymore. When I realized that my pantry held all the spices to prepare curry, I was like, ‘whaaaatttt!’ See, that’s my problem, the minute I learn how to prepare something from scratch, I up the ante and take things to a whole different level. Sometimes I wow myself, and other times I look at my kitchen and say to myself, ‘this is beginning to look like a freaking restaurant in here!” I’m loving what I do. I love my obsession with food. It’s good food fast, not fast food.
Cabbage is often overlooked as an ingredient, but can be incorporated into many d’luscious meals such as this curried chicken back with cabbage and bok choy. Yes you can definitely curry cabbage. Go ahead and try it.
