Ever since I started buying these wild caught fresh fishes from the ocean, it has been rather difficult for me to purchase, let alone, eat store bought fishes. There is a huge difference in the taste! You would have to taste fishes that are fresh from the ocean, to understand or even fathom the taste. It’s a culinary experience that will never be forgotten.
I live in Florida and have found a modest little fish market, that sells whatever species are brought in by the fishermen for that specific day. There is usually a menu posted with the catch of the day. Once the fishes are sold out….that’s it… no more fishes until the next days catch. I find this totally awesome….no stale, smelly or rotten fishes that are going bad. These fishes are the purest ever!
My favorite person there is George. He enjoys his music while cleaning the fishes. He is such a joyful, jovial, free spirited individual. He cleans my fishes with so much love, and I do believe it contributes to the tasty, d’luscious results once my fishes are prepared. I strongly believe that if someone serves you any kind of food with love, it is automatically transferred and manifested into that meal. Have you ever has someone with a nasty attitude to serve you at a restaurant or worst yet, prepare your meals for you? Whenever that happens, I usually loose my appetite immediately, which is one of the reasons I prefer to create my own unique meals from scratch.
I purchased some yellow tail snapper and some goat fishes (mullet). I knew I was going to stew them. I cannot find words to describe the sauce that I prepare for the stew. Fresh herbs and spices are a must with all my dishes, including stewed fish. A variety of herbs are combined to create an authentic infusion. Trust me when I say, it taste even much better than it appears to be.
Fishes usually taste “not so fresh” the day after, but not my fishes! I guess it is because it is “fresh!” I can’t wait to return to the fish market. Overly anxious is an understatement, but that is exactly what I’m feeling at the moment. Hopefully this time I can get my hands on the Mangrove fishes. I heard that they are the tastiest, most flavorful snappers ever!
