Jamaican Jerk Barbecue Ribs

 

I had huge dinner plans for the new years. All of the meats I had intended to cook were marinated. I anticipated an awesome celebration of food and thanksgiving for living into the New Year. My body had its own agenda. Nothing was cooked in the my sanctuary all week.

Can you imagine the depths of flavor embedded in this slab of rib, as it lay helplessly, happily marinating in its own juices,  in conjunction with  the jerk seasoning that had been caressing each bone, rib by rib, day by day,  night by night for an entire week.  This was just pure heaven! I really wish you could taste it.  Once again, the longer the meat marinates, the tastier it becomes.

I prove to myself time and time again, that I am a true foodie.  Now, I was bedridden for an entire week.  Did you hear that? An entire week!  I couldn’t wait to get up and out of the bed. The first jolt of energy that my body could find, I was in my sanctuary, revving up this slab of  ribs. Yes, that right. You’ve heard of the movie “I dream of Jeanie.”  Well….I dreamed of my kitchen and my food…..and my pots and pans too.  I know…. I’m one crazy puppy.

My greedy husband didn’t even give me the opportunity to take some decent photo shots. His rebuttal was that, when he tasted one rib, it led to another and another and another. I’m just grateful that he left some for the rest of us. But I have to tell you…..this was awesome! Totally Jamaican, totally d’luscious, totally authentic!
