A few years ago, I stumbled upon a jar of roasted red peppers and decided to give it a try. It was awesome. I was hooked and used in mostly on sandwiches. Being a foodie, I am completely adventurous and curious about all kinds of food. Once I realized how super easy it was to make roasted red pepper, I no longer felt the need to purchase the jar. I roast peppers quite often and use it any and everywhere I possibly can, such as in this roasted pepper rice. Talk about a twist on rice. If you are tired of plain white rice with your meals, go ahead and add some roasted red bell peppers to create a healthy and vibrant dish.
