Summer’s End Grilled Vegetables

 

Summer is over but the grilling won’t stop! How many times have I expressed my love for grilled vegetables? I’ve stopped counting. This was another one of my “I’m not in the mood for meat” creations. I have fallen in love with grilled onions and can’t seem to get enough of it. I grill everything because I KNOW it will be worth my while. Once I get the charcoal going…. it’s on.

I now have reason to believe that everything can be grilled. I mean, I will grill the tires off of a car! The flavors become so intense. Foods that you would have never considered eating becomes awesome. It turns into one of those OMG moments, where you just can’t believe that you are eating “that” . I am already a fan of probably all things vegetables and tubers, so I become more inclined, adventurous and anxious to grill everything, just to witness the transformation in taste.

I live in Florida, so my will to grill is not at all affected by the weather in any way. However the change of season exacerbates my mood. You know….like if it rains, you just wanna lay in bed all day.  Well, fall is officially here and the days are shorter now…well they seem to be shorter and I am in such a rush for Thanksgiving day and we’re only in the month of September. Fall does that to psych. You walk into the supermarket and it beckons you to to shop for things that you don’t even need. You walk into the department stores and there are pumpkins everywhere. Matter of fact, I just bought me a decorative pumpkin the other day. I love it. I can’t eat it, but I love it.

I’m ready to make pumpkin pies and muffins and all those wonderful goodies, but for now, let me enjoy these awesome grilled vegetables, while I say goodbye to summer.
