Long gone were the days when I made macaroni and cheese from the box. No more powdered cheese nastiness ladened with chemicals, artificial flavorings and food coloring! I have redeemed myself. I am now officially a culinary extraordinaire who has learned to do better and I’m so glad I did. My herbaceous macaroni and cheese was amplified, highly seasoned and Jamaican”ized”. I authenticated this culinary delight with my island’s touch. It’s a winner winner mac and cheese dinner! For the last couple of years I’ve been trying my best to educate others about the dangers of what’s in their food. Read the ingredients label on your packaged foods. It’s so much easier to get a few block of cheese and some heavy cream to create an awesome sauce. Herbs adds depth of flavor. A pinch of ground nutmeg redefines the entire flavor profile, hides in plain sight and makes you go hmmmmph.
My Bahamian/Bajan friend Toya and her mom, makes the most amazing macaroni and cheese. However, I am taking the crown today. This macaroni and cheese was the highlight of the day. Toya, I love you and still crown you as the macaroni and cheese Queen, but right now… this minute, I’m the macaroni and cheese Diva and feeling pretty proud about it.
